Meatless Monday: Fattoush
It's an Arabic salad that makes use of bread that has started to go stale and combines it with vegetables and herbs, depending on availability, with lemon-olive oil dressing. The ingredients are pretty flexible, but some combination of tomatoes, onions, and cucumber is pretty standard.
Yield: 4 entrée-size servings
- 1 cucumber, peeled and seeded
- 1/2 onion
- 2 tomatoes
- 1 15 oz can garbanzo beans, rinsed and drained
- 6 oz Feta
- about 1 C microgreens or lettuce torn into small pieces
- 1/2 C olive oil + extra for toasting the bread
- juice of 2 lemons
- 1 T dried oregano
- about 2 C naan or pita bread, torn into small pieces
- Cut the cucumber, onion, tomatoes, and Feta into bite-sized pieces. Add the garbanzo beans and toss together in a large bowl.
- Combine 1/2 C olive oil, lemon juice, and oregano in a jar and shake well to combine.
- Heat a small pan over medium heat and add just enough olive oil to coat the pan. Add the bread, in batches if necessary, in a single layer and stir frequently until browned. Drain on paper towels. (These can be made ahead of time.)
- In serving bowls, layer the lettuce, then the vegetables, then the Feta and bread. Drizzle with the dressing. Note: if you are keeping some for later, add the dressing right before serving.
